I believe some may require a certain firmware to play it, and if it is like the PSP, then that firmware would be on the disc as well.
Otherwise no, it will not update your system without telling you or asking you.

If you don't do regular updates, they are incorporated with newer games that need that firmware update in order to run. Typically it will begin to install when you load the game. I've never heard of it doing an update in the middle of your game.
Assassins Creed had a firmware update included, yes. It would have installed before you ever started playing though.
